File monitor on SMTP Relay Queue

We use a Windows IIS SMTP Relay in our org, and would like to monitor the Queue folder for "stuck" emails. (our SMTP will only relay emails that use a specific "from" address, others simply remain in the Queue folder)
 
Each file in the Queue folder represents an email. Ideally there would be zero files in that folder at all times. In practice, files appear in that folder for a few seconds up to a minute or two. If the email doesn't get processed in about 2-3 minutes, it won't get processed and requires manual intervention. This is where we'd like to see an IPSentry alert.
 
We use IPSentry 6.10. If I set the simple "Number of files" monitor, it will trigger the alert if IPSentry happens to check during the few seconds' time where there might be legit emails still being processed. By the time we get to the folder to manually intervene they have already been processed through... so we get a lot of false positives.
 
The ideal solution appears to be an alert for files OLDER than a few minutes that exist in that folder. I'm not seeing an obvious way to do this in 6.10, am I just missing it?

    In the file and directory monitor, there is an option to check the number of unmodified files where you can specify the time frame.
